Clean eating - Turkey Sausage veggie skillet

Trying to use up some veggies inn the house and I came up with this fabulous dish. So simple to throw this stuff together for a easy, delicious, well balanced meal. Again, use whatever veggies you have, make it your own.  You will see I load everything down in onions. Onions have fabulous health benefits and should be eaten daily. I have been known to several different onions to get different flavors in one meal, with a ton of benefits.



TURKEY SAUSAGE VEGGIE SKILLET

6 links of Organic Turkey Sausage
2 cups of zucchini
1 cup onions (white and vidalia)
2 cups mushrooms

Sauce
VIDALIA ONION VINAIGRETTE
1 tbsp dry mustard
1 sweet vidalia onion chopped
1/2 cup powdered stevia
 1/4 Red wine vinegar to your liking
1 c Olive Oil
Poppy seeds (optional)


Cut up all veggies. Toss together in a skillet. add a 1/2 cup of sauce and saute.
You can cook your turkey sausage however you want. You can take it out of its skin and brown it, you can cut in pieces and add into veggies or I like it, grilled and then cut up in the skillet Pin It
